Don't confuse 'Freshly Brewed' (a phrase that large chain stores promote) with 'Freshly Roasted'. Coffee stales like any other food product, so if the beans are older than 10 days from the time they are roasted, the staling process is well underway. So...'Freshly Brewed' in most cases means that the coffee was stale to begin with and you can taste that in your cup.
